OUR BEEF
At Heaven’s Hollow Farm, we maintain an abundance of nutritionally dense grass and clover for our cattle to graze throughout the year. While on pasture, the cattle we graze are supplemented with local grains and have a history of consistently producing high quality beef for our customers. We employ the use of planned rotational grazing which allows for the pastures to sequester more carbon and to be more resilient to the unpredictable weather which we often face. Our cattle pastures are managed in ways to reduce negative impacts to wildlife and grassland birds like the Grasshopper Sparrow and Eastern Meadowlark. These ground nesting birds rely on our pastures to hatch and raise their young and we take great pride to ensure we’re stewarding the land in a symbiotic way. We have also planted native warm season grasses for our cattle to graze which provide improved habitat for wildlife like the bobwhite quail. On our farm and the farms that we rent, cattle are excluded from streams to ensure that we’re doing our part to protect our friends down river and as far as the Chesapeake Bay.
Our cattle are transported to a local USDA inspected processor 45 minutes away from our farm and are handled using the lowest stress methods possible. In comparison to beef offered through most grocery stores, our beef is dry aged for a minimum of 14 days to allow for a naturally occurring process to take place which improves the tenderness of our already highly marbled, tender beef. We offer an extensive variety of individually vacuum sealed beef cuts for our customers. In addition to the well-known cuts like ribeye, T-bone, sirloin, various roast and ground beef, we also offer a variety delicious lessor known steaks like Flat Iron, Denver, Ranch, and Chuck Eye.
